I think I was told that if your car is listed in the tech regs, you go with that weight, as opposed to the calculation.  It does not state that in the regs.  Since its not in writing, I can take 75 pounds of lead out of my car to meet the calculated weight rule, right?

Unfortunately no...the rules were written with intention of if the car is currently listed then all listed weights and specs apply...if it isn't then the calculation applies.

The rules were amended to include this as well.
